Piña Colada Power Waffles (V & GF)

Tropical waffle state of mind. It's simple with the right ingredients.



Recipe


Dry Ingredients

  • 2 cups gluten-free flour blend (King Arthur)

  • 2 scoops vegan protein powder (Vanilla Flavor)

  • 1/2 cup almond flour

  • 1/2 cup unsweetened organic coconut flakes

  • 2 tablespoons chia seeds

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Wet Ingredients

  • 1 large can pineapple chunks

  • 1 1/2 cup unsweetened coconut milk

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 1/2 teaspoons apple cider vinegar

  • 1 tablespoon coconut extract

  • 1 tablespoon rum

Directions

First, plug in your waffle maker to warm it up. In one large bowl combine all of the dry ingredients. Strain the juice from the pineapple into another bowl. Put the pineapple chunks in the blender to become puree. Add 1/2 cup of the pineapple juice to the puree and then combine in another medium bowl with the other wet ingredients. Wisk all the wet ingredients together and then pour slowly into the dry ingredient bowl while stirring. After your waffle maker is pre-heated ladal in 1/3 of the batter at a time. Once they are done you can serve with whatever toppings you want - maybe some cut up pineapple and toasted coconut flakes. Enjoy <3
