Banana Bread Protein Waffles (Vegan + GF)

These action packed waffles bring back the nostalgia of warm banana bread mixed with 25+ grams of protein.


This recipe makes 3 very large waffles :)

PS: my infamous waffle quote is, "If your waffle pockets aren't full then you ate pancakes."


Recipe


Dry Ingredients

  • 2 cups gluten-free flour blend (King Arthur)

  • 2 scoops vegan protein powder (Garden of Life Raw Organic Protein Vanilla Chai)

  • 1 cup roasted and chopped pecans or walnuts (just put in both, why not)

  • 1/2 cup almond flour

  • 2 tablespoons chia seeds

  • 2 tablespoons ground flaxseed/meal

  • 1 tablespoon dry almond butter powder

  • 1 tablespoon cinnamon

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Wet Ingredients

  • 2 overripe bananas

  • 1 1/4 cup unsweetened almond milk

  • 1/4 cup olive oil

  • 1/4 cup maple syrup

  • 1 1/2 teaspoons apple cider vinegar

Directions

First, plug in your waffle maker to warm it up. In one large bowl combine all of the dry ingredients. In another medium bowl smash the bananas and then add the other wet ingredients. Wisk all the wet ingredients together and then pour slowly into the dry ingredient bowl while stirring. After your waffle maker is pre-heated ladal in 1/3 of the batter at a time to make some giant waffles of magic. Once they are done you can serve with whatever toppings you want - maybe some cut up bananas or more nuts. I was feeling fruity so I added some blueberries. Top with some coconut whipped cream and a sprinkle of cinnamon. Enjoy <3
