Almond Power Protein Waffles (V + GF)

These waffles paired well with some homemade Calamondin (small citrus fruit) jelly/syrup. These Calamondins actually grow in my Mom's garden. She made the syrup, otherwise I would give you the recipe. :-p


Recipe


Dry Ingredients

  • 1 1/2 cups gluten-free flour blend (King Arthur)

  • 1/2 cup vegan protein powder (Vanilla Flavor)

  • 1/2 cup steel cut gluten free oats

  • 1/2 cup unsweetened organic coconut flakes

  • 2 tablespoons chia seeds

  • 2 tablespoons ground flaxseed

  • 2 tablespoons powdered almond butter

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup almonds

Wet Ingredients

  • 2 1/2 cup almond milk

  • 1/4 cup olive oil

  • 1/4 cup maple syrup

  • 2 teaspoons apple cider vinegar

  • 1 tablespoon almond extract


Directions

First, plug in your waffle maker to warm it up. In one large bowl combine all of the dry ingredients EXCEPT the almond. Toast or roast the almonds until they are fragrant then smash into smaller pieces - set aside. Wisk all the wet ingredients together and then pour slowly into the dry ingredient bowl while stirring. Stir in the almonds at the end with a rubber spatula. After your waffle maker is pre-heated ladal a bit of the batter at a time. Once they are done you can serve with whatever toppings you want - maybe some homemade jelly or whole roasted almonds. Enjoy <3
